The Fruits Basket opening theme 'For Fruits Basket' is classic. Very beautiful indeed, and I'd say it is my fave opening, closely followed sejak the Azumanga Daioh opening 'Soramimi Keiki'. My favourite ending theme is the Azumanga Daioh one 'Raspberry Heaven'.
