Canon is when something actually happens. If the characters actually say they love each other, blush around each other, kiss, hug, get married, date, or stuff like that. You can't just go by your own opinions. Heck some of my favorite pairings are fanon, but I still love them and respect the canon pairings.

they dont have to have had sex, but there has to actually be a relationship/ romance going on. (sometimes its kinda hard to tell though, cause the mangaka is hinting at it but nothing actually "happens", in that case i think its pretty much up to the viewers/readers if the couple is canon or not).
