it is pronounsed as she-on . Axel berkata her name in the 358/2 days trailer, witch anda can find on youtube

anda say it ["Shuh-on"]. So it seems lebih like Shion than Xion [Zee-on].

but in other places its shee-on
although they say shee-on in the game
that is just the translation and it all depended on where they translated it

it could have easily been zee-on as well
so in my opinion we could call her sejak either
because neither is lebih right over another.
I presonaly think zee-on sounds better
