They both represent both.
So I think Darcy represents the prejudice because at first he tried to resist his love for Lizzie because he was rich and she was poor.
And Lizzie represents the proud because when Darcy proposed he told her that he wanted to marry her against his better judgement and those words ofended Lizzie very much and also she knew that Darcy was the responsable for the separation of Jane and Bingley,so for these reasons she would never accept him, because she was proud...
(Anyway I think even if this reasons didn't exist Lizzie wouldn't marry with Darcy because by that time she wasn't in love by him yet and she herself said that only true love would persuade her in matrimony)
Lizzy wasn't prejudiced, she didn't like Darcy that much because he wounded her vanity.
And Darcy was prejudiced. He was rich and he saw the Bennets. Especially Mrs.Bennet and Lydia with Kitty, and it was a reason why he made Charles go away and not marry Jame.
But of course he was pride too. No doubt. It's only that Lizzy wasn't that prejudiced. IMO!
Lizzie was prejudiced in the sense that she judged Darcy before she had all of the facts - with regards to Wickham etc
Darcy was prejudiced in his opinion on the Bennet family as a whole.
They were both proud - Lizzie possibly more so.

I sorta agree with Kandrakar. To each his own opinion
Specifically, I think that this is what each character finds they have to overcome in the story. Darcy comes across as extremely proud at the beginning, but changes later (a point has already been made about how a proud person wouldn't propose a second time, but I personally think that's an example of how his character develops). And Elizabeth makes some harsh assumptions about Darcy quite early on, but she doesn't stand by those opinions later.
So I think that's why I see them as this way around now. Not so much based on who, overall, has the most pride or the most prejudice, but which character overcomes which flaw.
