If anda put Makanan colouring in a potato seed will the potato grow purple?

No, if you're only working with the seeds anda would have to change the potatoes' genes.
But anda might get some effect if anda constantly water the plant with heavily dyed water.(or anda can sejak potatos that are already purple)
