It's a display of power and her personality. Blue api, kebakaran burns hotter than red. If I remember correctly the creators berkata she's able to bend blue api, kebakaran because of her cold manipulative mind frame.
It has also been berkata that it burns hotter and is there for blue because of her mastery of lightningbending.
