She has a great character design, the crew's said she has complexities we haven't seen yet, what we've seen of her is quite interesting anyway, and she's in a pretty devastating situation right now, whether you like her or not.

Also she has a lot of fans who think her beefiness is really hot. IDK if that's why ApplesauceDoctr thinks she's cool or not (though I'm guessing it isn't) but that's why a lot of people do. So it's worth mentioning. Plus Peri's done similar bad stuff for similar reasons and she seems to be on the path to a redemption arc.

Honestly the more hate she gets, the more I love her - a lot of the hate I see is based on things she hasn't actually done (actually a lot of the things she's accused of, Lapis is actually guilty of) or things that are misinterpreted (not that she's not a major jerk, but just like the other characters, she's not one-dimensional.)
